Kalamay Ube Recipe
Unfortunately, we wasn’t in a position to publish the recipe as meant. As my luck could have it, I caught a negative of instance for the common cold, maybe not when but twice, in January and ended up being knocked away cold for a good three months!

Kalamay Ube with latik is deliciously sweet and gluey while the perfect treat or dessert!
Ube kalamay is just a delicious spin-off of our kalamay hati recipe. Other than the addition of grated yam that is purple ube extract, the ingredients and means of both these glutinous rice cakes are exactly the same.
If you value kakanin, kalamay ube is for you personally! It is easy to make & most for the work is really more of stirring consistently until it comes together in a delicious mass that is sticky.
Tips about how to Make Ube Kalamay:
All of the work is stirring the combination, make use of non-stick pan and a sturdy wooden spoon to really make the process easier.
The ube extract would be to add color and enhance flavor but are omitted if you want. The beginning combination will be paler compared to last item but color will deepen because the kalamay cooks and thickens.

Jackfruit syrup
Combine the juice of 1 can (langka in syrup) and 1 ¾ cups water in a cooking pot. Add 2 cups of sugar. Chop the langka and include it to the cooking pot. Bring to boil and continue steadily to cook for 20 to 25 mins or until the langka are soft. Cool off before serving because of the kalamay.
To serve – brush kalamay with coconut curd oil then slice kalamay into pieces. Place in a bowl and drizzle jackfruit syrup on top and around the kalamay pieces then add chopped langka. Top with an increase of coconut curd. Enjoy.
1 pack, 16 oz grated ube
1 2/3 cups sweet rice flour
1 can coconut milk
1 3/4 cups sugar that is white
1 tsp vanilla (optional)
1/2 tsp food color
1 tbsp coconut oil (through the latik)
For the LATIK:
2 cans of coconut milk or 1 can of the brand that we use (see photo below)
*Note:
Recipe yields 2 dessert pans
You can add 1/4 glass more sugar it sweeter if you prefer.
